与赤藓糖醇相比，阿洛酮糖在味道和溶解度上存在差异。首先，阿洛酮糖的甜度约为蔗糖的70%，其风味与果糖高度相似。与其他甜味剂相比，阿洛酮糖更接近蔗糖，与蔗糖的区别几乎难以察觉，因此无需通过复配来掩盖不良的回味，可以单独使用。但是，口味的差异需要具体分析具体产品的具体用量。其次，相比赤藓糖醇的溶解性容易沉淀结晶，阿洛酮糖更适合用于冷冻甜点（冰淇淋）、糖果、烘焙食品和巧克力制品。如果复合，阿洛酮糖可以抵消赤藓糖醇的凉味和吸热性，降低其结晶度，降低冷冻食品的冰点，参与美拉德反应，使烘焙食品产生良好的金棕色色调。目前对 D-阿洛酮糖的添加量没有限制。
